I had a craving for shrimp scampi the other day. That craving mixed with this amazing dressing that my sister started making with olive oil, parm, garlic, and lemon juice, inspired me to make a Shrimp Scampi Cesar-ish Salad. The reason it’s “Cesar-ish” is because the dressing tastes like a cesar for some reason… but doesn’t actually have anchovies. This was exactly what I wanted… YUM!
Ingredients:
3 tbs EVOO
1 tbs Ghee
3 garlic cloves, chopped
1/4 cup onions, chopped
3/4 lb raw peeled shrimp
1/2 cup dry (cheap) white wine
1 large head of lettuce (I like romain for this dish, nice and crunchy)
Avocado, chopped (optional)
Dressing:
3-4 tbs Parmesan cheese
2 garlic cloves, chopped
1/2 lemon, juiced
3 tbs of the sauce that you cooked the shrimp in
EVOO
Salt and pepper to taste
Directions:
1. Heat a large pan over low heat, add the EVOO and Ghee, mix. Once it’s all melted, add garlic and onions, cook until translucent.
2. Add shrimp to the pan, add the wine, and cover on low heat until all shrimp are pink (about 7 min). Try not to burn your mouth when trying one of the shrimp… they smell DELIGHTFUL!
3. While the shrimp is cooking, clean and chop the lettuce.
4. Combine all dressing ingredients (EXCEPT EVOO & SALT) in the bowl. Once mixed, slowly pour the EVOO in while whisking until you obtain your desired consistency (I probably used about 3 tbs). Finally, add salt and pepper to taste.
5. Toss the salad with the dressing until covered. Take the tails off the shrimp and place on top. You can also add sliced avocado to the top as well, mmmm.
